Picture This..
So it's Tuesday, 7:00PM (not really but just imagine). I picked tuesday becuase it's the WORST day of the week. It's not monday, but your're no closer to friday. It's basically being stuck in limbo. So you get home, your pissed becuase it's tuesday (and for that reason alone) and you absolutely need to eat. If your're like me and have spent way to much money on fast food in the past, eating out is not an option. (for your wallets sake) You think to yourself, “well I'll cook then”. Except we all know it's not that easy, cooking is WORK. Just the thought of preparing a half decent meal makes you want to take a nap. What to do? “oH weLl I guEsS I'lL jUsT orDeR sOmEthInG”..
Don't do it to yourself, don't do it to your wallet. Fast food isn't healthy, fast food isn't cheap. I've learned recently that figuring out what to cook is half the battle. It's becuase of this that I've selected the greatest hits of Jason prepared meals, and commit to making those each week. This way my options are limited which makes it easier to pick something. Also, the chances of me having the proper ingredients increases becuase I make the same things all the time.
A trap I fell into was overdoing it when it came to cooking at home. Meaning, yeah, I was cooking all the time, but I was always cooking something new that I didn't have the ingredients for. This meant I spent a ton of money at the grocery store, and ended up with random things in my kitchen that I would never use again (like fish sauce). Variety is nice but having money in the bank is nicer.
But you came here for the food, not the wine. No more set up, lets get to it! I'm going to do this in multiple series, each post will have two recipies. Today, Spicy Alfreado hybrid pasta and Jason's Stir fry
Spicy Alfreado hybrid pasta
Haha suprise suprise, some of these dishes are Jason Hutchinson cooking extrodinare exclusives. This here is one of those dishes. This dish is super easy, super delicious, I basically came up with this when I was trying to make store bought white sauce not taste so store bought. I say “came up with” but it's really nothing special
Ingredients
- Rigatoni noodles
- White pasta sauce
- Chicken Breast
- Smoked paprika
- Cumin
- Garlic
- Onion
- salt and peppa
- Spinach
- Spicy Korean chili flakes
- Heavy whipping cream
- Green onion
- Olive oil
- Cream cheese
- Parmesan
I think that's it..something missing? measurements? I don't know who you think I am, but there will be no measurements in this household. I cook based on pure instinct, so no measurements…add as much or as little as you like I won't tell you how to live your life
Directions
Start by chopping up all your stuff. Dice the onions, slice the green onions, cut the stems off the spinach, cut the garlic. Rinse everything. Put that away in some containers or somthing becuase you'll need it later. Pro tip: not really a pro tip but you'll have more fun, buy a slap chop! I got a super cheap knock off at walmart and I use it alllllll the time.
Cut the chicken, season the chicken. I usually put all the chicken in a bowl and then toss in some cumin, some salt and peppa, smoked paprika. Mix it all up, I like to use wooden spoons
So at this time get your rigatoni on some salty water. Bring the water to a boil, put the noodles in, and then bring it down to a simmer.
Now grab a skillet, or a wok. Put the stove on Medium heat. let it get hot. Put some olive oil in the skillet, let it get hot. Now toss the onions and garlic in. When the onions are translucent send in the chicken!
Once the chicken is about halfway done, throw in the green onions. When the chicken is all the way done toss the white sauce in the skillet with some heavy whipping cream. At this point sprinkle some korean chili flakes, and let that cook on low heat until the noodles are done.
Drain the noodles, pour the alfredo chicken mix from the skillet in with the noodles and let that sit on low heat. Add the spinach, add some parmesian, add some cream cheese..to make it thiccc
BOOM done, and depending on how much you make this can last you for a while.
Jason's Stir Fry
Next up, some good ol fashoned stir fry. This one is not an original, but I call it Jason's recipie becuase I've read a bunch of other recipies and usually make some sort love child of all of them.
Ingredients
- Meat (I usually use marinated beef from hmart, but you can use anything)
- Green onions
- Onions
- Peppers (I use sweet peppers, and red/green bell peppers but again use anything)
- Pineapples
- Soy sauce
- Spinach
- Egg
- Garlic
- olive oil
Directions
So I usually try and create some marinade for the meat. You can totally just buy some, but sometimes I get a little fancy and make my own. consisting of water, olive oil, salt and peppa, paparika, stuff like that, I havent really perfected it yet, so by all means feel free to skip this step
Once again cut the onions, cut the peppers, cut the spinach, cut the garlic, pineapples if you don't buy them cut already.
Scamble some eggs in a seperate skillet and set that joint aside
Prep the skillet/wok, add olive oil, put the burner on high, let it get hot, add onion and garlic. Once the onions are translucent toss in the meat. When the meat is halfway done toss in the green onion, the pepper, pineapples, and soy sauce
Last step, when the meat is almost done, toss in your egg and spinach. Then…BOOM done Jason's stir fry. You can deffinetly add some rice, if you do cook that first and then toss it on the skillet after your meat is close to being done.

So hope you get some use out of this. These are two of my favorite dishes (becuase they're easy).
